  • 3 Cups of Water
  • 2-3 Cloves

  • 1-2 Sprigs of Thyme

  • 2-3 Limes
  • 1 Tb Tomato Paste
  • Salt to taste
  • Powdered Seasoning to taste
  • 1 Tb Epis
  • 1-2 Tb Oil
  • 3 Cups of Water
  • 2-3 Cloves
  • ½ Hot Pepper
  • 1-2 Sprigs of Thyme
Instructions
  1. First, add 2 cups of water and half a lime to a pot and bring to a boil.
  2. Add the drumsticks to a bowl and pour salt and squeeze lime juice on to the meat.
  3. Rub the lime on the drumsticks. This will help remove the raw smell and taste from the meat.
  4. Remove the skin.
  5. When all the skin has been removed, rinse the meat 2-3 times. Remove all the slimy bits. After the last rinse, pour the boiling lime water onto the meat.
  6. Allow the meat to steep in the hot water for 5-10 minutes. This will allow the last few slimy bits to be removed.
  7. Remove the chicken from the hot water to prepare to season the meat.
  8. Add thyme, juice of 1 lime to the meat. Add tomato paste, epis, seasoning, hot pepper, salt, cloves and oil to the meat.
  9. Mix in all the seasoning into the meat and allow it to marinate.
  10. Now, it’s ready to cook.
