  • 1 Tsp Tomato Paste
  • Green Pepper to taste
  • Hot Pepper optional
  • Epis just a bit
  • Powedered Seasoning to taste
  • Salt to taste
  • Onion to taste

Haitian Scrambled Eggs on Toast
Instructions
  1. Fry the tomato paste and Epis in the oil
  2. When it starts to brown, add the green pepper, hot pepper and onion
  3. When the veggies have softened a bit, add the eggs. Mix well.
  4. Scramble the eggs until they’re cooked.
  5. Serve hot with plantain, bread or veggies
