- 2 Eggs
- 1 Tsp Oil any kind
- 1 Tsp Tomato Paste
- Green Pepper to taste
- Hot Pepper optional
- Epis just a bit
- Powedered Seasoning to taste
- Salt to taste
- Onion to taste

Instructions
- Fry the tomato paste and Epis in the oil
- When it starts to brown, add the green pepper, hot pepper and onion
- When the veggies have softened a bit, add the eggs. Mix well.
- Scramble the eggs until they’re cooked.
- Serve hot with plantain, bread or veggies
