- 3-4 Cups Rice
- 1 Cup Dry Pinto Beans
- 8-10 Cups Water
- Epis
- Tomato Paste
- Powdered Seasoning
- Salt
- olive oil
- Cloves
- Thyme
- Parsley

- Hot Pepper
- 1/2 Onion

Instructions
- Sort through the beans before washing them at least 3 times
- Add 4 cups of water to a big pot and add washed beans to the pot.
- Add garlic, cloves, parsley, thyme and oil to pot and bring to a boil
- After about 2-3 hours, the beans will be soft
- Separate the beans from the boiled water, keep the water for later use
- In another pot, add oil and fry onion, green pepper, garlic, Epis and tomato paste. Allow to brown well.
- Add the cooked beans to fried mixture allow to simmer for 2 minutes
- Add the boiled bean water, add half of hot pepper and bring to a boil
- While the water comes to a boil, rinse the rice at least 3 times
- When the water is boiling, add the rice. Allow it cook; this will take about 20 minutes. When the water is about done, reduce the heat. Allow rice to finish cooking
