  • 3-4 Cups Rice

Instructions
  1. Sort through the beans before washing them at least 3 times
  2. Add 4 cups of water to a big pot and add washed beans to the pot.
  3. Add garlic, cloves, parsley, thyme and oil to pot and bring to a boil
  4. After about 2-3 hours, the beans will be soft
  5. Separate the beans from the boiled water, keep the water for later use
  6. In another pot, add oil and fry onion, green pepper, garlic, Epis and tomato paste. Allow to brown well.
  7. Add the cooked beans to fried mixture allow to simmer for 2 minutes
  8. Add the boiled bean water, add half of hot pepper and bring to a boil
  9. While the water comes to a boil, rinse the rice at least 3 times
  10. When the water is boiling, add the rice. Allow it cook; this will take about 20 minutes. When the water is about done, reduce the heat. Allow rice to finish cooking
