- 2-3 Limes

- Tomato Paste
- Cloves

Instructions
- Add half a lime to 4-5 cups of water and bring to a boil
- While it's boiling, cut the meat in cubes, not too small
- Pour a generous amount of salt and squeeze lime juice on the meat. Mix well and let the meat sit for 5-10 minutes to allow the salt and lime to penetrate the meat, this will help take away the raw smell from the meat.
- After this, rinse the meat 2-3 times
- After the final rinse, pour the boiling lime water onto the meat. Let the meat soak for 5-10 minutes before removing the meat from the hot water
- Season the meat: add epis, tomato paste, pepper, thyme, and cloves.
- Boil the meat separately. When the water is almost gone and the meat is tender, bake the meat for about 20 minutes at 400 F. Save the boiled meat sauce.
- Fry tomato paste in olive oil, add onion, pepper and epis and salt. When the onion and pepper have softened, add the boiled meat sauce and a bit of water. Bring mixture to a boil, then add the baked goat meat to the mixture. Add a bit of onion.
