Instructions
  1. Add half a lime to 4-5 cups of water and bring to a boil
  2. While it's boiling, cut the meat in cubes, not too small
  3. Pour a generous amount of salt and squeeze lime juice on the meat. Mix well and let the meat sit for 5-10 minutes to allow the salt and lime to penetrate the meat, this will help take away the raw smell from the meat.
  4. After this, rinse the meat 2-3 times
  5. After the final rinse, pour the boiling lime water onto the meat. Let the meat soak for 5-10 minutes before removing the meat from the hot water
  6. Season the meat: add epis, tomato paste, pepper, thyme, and cloves.
  7. Boil the meat separately. When the water is almost gone and the meat is tender, bake the meat for about 20 minutes at 400 F. Save the boiled meat sauce.
  8. Fry tomato paste in olive oil, add onion, pepper and epis and salt. When the onion and pepper have softened, add the boiled meat sauce and a bit of water. Bring mixture to a boil, then add the baked goat meat to the mixture. Add a bit of onion.
