- 2 Cups Dry Black Beans
- 8-10 Cups Water
- Epis
- Tomato Paste
- Salt
- olive oil
- Cloves
- Thyme
- Parsley
- garlic

Instructions
- Sort through the beans before washing them at least 3 times
- Add 4 cups of water to a big pot and add washed beans to the pot.
- Add garlic, cloves, parsley, thyme and oil to pot and bring to a boil
- After about 2-3 hours, the beans will be soft
- If the water had reduced too much, add more water. Allow to boil again
- Take about half the beans and add to blender with some of the boiled bean water. Blend well.
- Strain the pureed beans. Do NOT add pulp back to the mixture.
- Add final seasonings and salt to taste. Serve with Rice
