  • 2 Cups Dry Black Beans
  • 8-10 Cups Water
  • Epis
  • Tomato Paste
  • Salt
  • olive oil
  • Cloves
  • Thyme
  • Parsley
  • garlic

  • 2 Cups Dry Black Beans
  • 8-10 Cups Water

  • Salt

Instructions
  1. Sort through the beans before washing them at least 3 times
  2. Add 4 cups of water to a big pot and add washed beans to the pot.
  3. Add garlic, cloves, parsley, thyme and oil to pot and bring to a boil
  4. After about 2-3 hours, the beans will be soft
  5. If the water had reduced too much, add more water. Allow to boil again
  6. Take about half the beans and add to blender with some of the boiled bean water. Blend well.
  7. Strain the pureed beans. Do NOT add pulp back to the mixture.
  8. Add final seasonings and salt to taste. Serve with Rice
