Ingredients
- 2-3 Limes
- 1 Tb Tomato Paste
- Salt to taste
- Powdered Seasoning to taste
- 1 Tb Epis
- 1-2 Tb Oil
- 3 Cups of Water
- 2-3 Cloves
- ½ Hot Pepper
- 1-2 Sprigs of Thyme

Instructions
- First, add 2 cups of water and half a lime to a pot and bring to a boil.
- Add the drumsticks to a bowl and pour salt and squeeze lime juice on to the meat.
- Rub the lime on the drumsticks. This will help remove the raw smell and taste from the meat.
- Remove the skin.
- When all the skin has been removed, rinse the meat 2-3 times. Remove all the slimy bits. After the last rinse, pour the boiling lime water onto the meat.
- Allow the meat to steep in the hot water for 5-10 minutes. This will allow the last few slimy bits to be removed.
- Remove the chicken from the hot water to prepare to season the meat.
- Add thyme, juice of 1 lime to the meat. Add tomato paste, epis, seasoning, hot pepper, salt, cloves and oil to the meat.
- Mix in all the seasoning into the meat and allow it to marinate.
- Now, it’s ready to cook.
